AFIA EFERE (WHITE SOUP)

Afia Efere (White Soup) is a traditional Nigerian recipe for a classic stew of goat meat with smoked fish with yam in a ground crayfish and okra sauce. The full recipe is presented here and I hope you enjoy this classic Nigerian version of: Afia Efere (White Soup).

(White Soup) Recipe
Origin: Nigeria

This stew can be made with fresh goat meat (ebot) or chicken (unen); though fish could also be used.

Ingredients:
1kg fresh goat meat
1 medium smoked fish (washed)
250g fresh okra (sliced)
100g ground crayfish
250g yam pounded in a pestle and mortar
25g fresh chillies, chopped
I uyayak pod (the sweet fruit pod of Tetrapleura tetraptera; substitute 30g palm sugar)
1l stock or water
salt to taste

Method:
Season the meat with salt, add to a pan along with some stock, bring to a boil and simmer for 30 minutes. Add the remaining stock, washed smoked fish, chopped chillies, okra, and ground crayfish. If you have access to uyayak fruit break into pieces and add to the pot. Otherwise, add the palm sugar.

Cover with a tigh-fitting lid and cook for 15 minutes. Mould the pounded yam into small balls and drop into the soup to cook and thicken. Season to taste and serve.
